In 2OO7, Neil Prentice started making sparkling base from pinot noir fruit from the Holly’s Garden vineyard. At that stage, he had no idea how he'd get it to bottle, but believed the vineyard might produce extraordinary sparkling base – and it does. He strongly believes they make fabulous, distinctive sparkling wine from the same fruit every vintage.
In the cool-climate Whitlands high plateau region of Victoria, Holly's Garden is home to voluptuous pinot gris and artisan sparkling wines. Grown at 750 metres in the deep volcanic soils of the Whitlands high plateau. This little amphitheatre is the warmest site in the very cool region.
