This wine is predominantly made from Pinot Noir with a small percentage of Chardonnay grapes added for finesse. The team at Deviation Road, select the fruit from the cool south-facing slopes high in the Adelaide Hills.

Expect notes of sweet strawberry, cherry and spice aromas follow through to the palate, where the lively bubbles add lift and balance to the fruit. This wine has wonderful length and supple mouth feel.

Hamish and Kate Laurie continue a five generation winemaking tradition. Devoted to the high altitude sites of the Adelaide Hills and with Kate's French oenology training the wines they produce are at once traditional and contemporary. With a fiery passion to create premium bottle fermented and aged sparkling that can genuinely cellar, their signature style is focussed, textural, restrained and balanced.

A blend of 60% Chardonnay, 40% Pinot noir which includes 15% reserve wines | Base year is from the 2018 harvest | Hand-picked and whole bunch pressed fruit from sites located above 550m in the Lenswood and Piccadilly Valley | Pinot Noir is fermented as red wine for the blending; 4-7% is added to achieve the pale pink colour | Full Malolactic ferment | Tiraged (sugar + yeast for second ferment) by hand | Stored at 14°C for a long consistent second ferment | Riddled and disgorged by hand on site | Small batches are disgorged at a time to allow the remaining bottles to continue ageing on lees as long as possible | The dosage liquor is crafted using a blend of base wines that have been aged for at least 12 months | 15 months on lees | 10 g/L dosage
